Sweet BBQ Chicken Breast

- 4 Chicken Breasts
- 2 tbsp Olive Oil
- Freshly Ground Salt and Pepper
- 1 c Ketchup
- 1/4 c Distilled White Vinegar
- 1/4 c Brown Sugar
- 2 tbsp Honey
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
Begin by heating a large skillet over medium-high heat.
Cut each chicken breast in half. Season both sides of the chicken with salt and pepper to taste.
Cover the bottom of the skillet with a thin layer of olive oil. Add the chicken breasts. Cook the chicken until the first side is slightly browned (3-4 minutes).
Flip the chicken over, cover the pan, and reduce the heat to medium. Cook the chicken until it is just slightly pink in the middle, but not thoroughly cooked through (8-10 minutes). See here. While the chicken is cooking, combine the ketchup, vinegar, brown sugar, honey, onion powder, and garlic powder in a small bowl.
Pour the sauce over the chicken. Turn the heat down to medium-low and cook, uncovered, until the sauce is thickened and the chicken is no longer pink in the middle (8-10 minutes). Note that the chicken should be flipped and the sauce should be slightly stirred around every 5 minutes or so. This will help to ensure even cooking while also keeping the chicken and the sauce from burning. Allow the chicken to cool for 5 minutes in the pan (the sauce will continue to thicken at this time). Serve, and enjoy!
Sweet BBQ Chicken Breast can be stored in the refrigerator for up to 5 days after cooking. For best results, reheat the chicken and the sauce in a covered skillet over medium heat.
