I can easily say that Creamy Chicken and Mushroom Pasta is one of my favorite meals to make! This recipe uses a blend of simple herbs and mushrooms that gives the sauce a unique flavor. In my opinion, it’s really the combination of mushrooms, fresh herbs, and dried herbs that bring this meal to the next level.
The mushrooms provide a savory element to the sauce that you just can’t get without them. Meanwhile, sautéing the chopped green onions with the chicken gives this meal a nice and fresh taste. And, lastly, the parsley brings everything together- creating a fantastic blend of herbs.
However, let’s not forget the creamy sauce that is put over the chicken and pasta! The heavy cream, mixed with just a little bit of mozzarella cheese, brings this meal to the ultimate comfort-food level.
Can I omit or substitute any ingredients?
I always encourage your own experimentation with my meals! So, maybe you don’t like mushrooms or you don’t have green onions on hand and you want good ideas for alternatives. If that’s you, keep reading below!
The mushrooms in this meal bring a certain depth and flavor combination to the sauce that you just can’t get without them. I would recommend using them if you can, but if you really don’t like mushrooms go ahead and omit them. This meal would still taste great without them!
Green onions add a unique flavor to this dish, but you can substitute them if need be. I recommend substituting the green onions with chives or a small amount of diced yellow onion. A combination of dried oregano and basil will work as well, giving this dish more of a classic Italian taste. Simply add whichever alternative you choose when the recipe instructs for the addition of the green onion.
How do I make Creamy Chicken & Mushroom Pasta?
Prepare the ingredients
I recommend preparing all of your ingredients before you start cooking- that way you are ready to go once we start rolling! So, thickly slice the mushrooms, chop the green onions, and cut your chicken breasts into strips. (I find it easiest to cut the chicken breasts into thirds, the long way).
Next, prepare the pasta by cooking it according to the package directions. You can use any pasta that you have on hand. I prefer spaghetti or Alfredo noodles because that’s what I usually have on hand. However, a shorter and chunkier pasta may blend better with the pieces of chicken and mushroom.
Cook the mushrooms & chicken
Once the ingredients are prepped and the pasta is on it’s way to cooking, you can heat up the olive oil in a large skillet over medium heat. Add the mushrooms to the hot skillet and cook them until they are soft and golden brown (approximately 5 minutes). Once the mushrooms are cooked, move them to a plate and set them aside.
I prefer to save myself a bowl or plate by seasoning my chicken directly in the pan. Do this by turning the heat up to medium-high and adding the sliced chicken to the skillet. Evenly sprinkle half of the garlic, salt, and pepper over the side of the chicken that is facing up. Allow the chicken to cook for about 5 minutes until the side that is on the pan begins to brown. Then, flip the chicken over and sprinkle the remaining garlic, salt, and pepper over the other side of the chicken. Now, allow the chicken to fully cook through.
Creating the sauce
Once the chicken is fully cooked, turn the heat back down to medium. Keep the chicken in the pan and add in the green onion and parsley. Sauté for 1-2 minutes until the onion and parsley are fragrant.
The mushrooms can now be added back to the pan, along with the heavy cream. Stir the mushrooms and cream in with the chicken, onions, and parsley. Allow it to cook, uncovered, at a light simmer for 5-10 minutes. The cream should thicken as it cooks.
Finally, turn off the heat and stir in the cheese until it is completely melted. The chicken and sauce can be served directly over the pasta.

- 12 oz Pasta of choice spaghetti or fettuccini works well
- 2 lb Chicken breast, sliced into thirds ~3 regular chicken breasts or 4 thin sliced chicken breasts
- 2 tbsp Olive Oil
- 8 oz Mushrooms, sliced
- 1/4 c Green onions chopped
- 1/2 tbsp Dried Parsley
- 1 tsp Garlic Powder
- 1/2 tsp Pepper
- 1/2 tsp Salt
- 2 c Heavy Cream
- 1/2 c Mozzarella Cheese
Instructions
- Begin by slicing the mushrooms, chopping the green onion, and slicing the chicken breasts into thirds (the long way).
- Prepare the pasta according to the package directions.
- Heat the olive oil in a large skillet over medium heat. Add the mushrooms and cook until they are soft and golden brown (~5 minutes). Move the mushrooms to a plate and set it aside
- Turn the heat up to medium-high and add the chicken to the pan. Sprinkle half of the garlic, salt, and pepper over the chicken. Once that side of the chicken has cooked, flip it over and sprinkle the remaining garlic, salt, and pepper over the other half of the chicken. Cook until the chicken is fully cooked through.
- Once the chicken is ready, turn the heat back down to medium. Keep the chicken in the pan and add the green onion and parsley. Cook until the parsley and onion is fragrant (~1-2 minutes).
- Add the mushrooms back to the pan, along with the heavy cream. Mix until the mushrooms are incorporated and the cream covers the chicken. Allow it to cook until the cream is slightly thickened (~5-10 minutes).
- Turn off the heat and stir in the cheese. Serve the chicken and sauce over pasta. Enjoy!
